Not only arabica and robusta but there is also a difference between processed coffee to natural and washed, that is, working with wet technique.

Nella piantagione, oltre alla cura degli alberi e alla raccolta dei frutti dalla pianta del caffè, avviene questo passaggio importante cioè quello della separazione della polpa dai semi che dà origine al caffè naturale oppure lavato.

Il metodo naturale prevede che il frutto del caffè venga steso al sole, poi continuamente rimosso per evitare le fermentazioni. Il sole si occupa di essiccare i frutti, che così vengono “sfogliati” dalla polpa seccata per ottenere il chicco di caffè pulito.

Nel metodo, detto “umido” o “lavato” il frutto del caffè viene invece prima spolpato con delle macchine che ne fanno uscire il chicco, ancora coperto dalla sua membrana gelatinosa chiamata pergamino. I chicchi vengono quindi messi in vasche di acqua in cui rimangono circa tre giorni e dove avviene una piccola fermentazione. Ed è questo passaggio che esalta l’acidità e i profumi del caffè, che poi viene comunque sempre rilavato e asciugato al sole con metodo naturale.

Per questo motivo il caffè lavato è diverso dal caffè naturale.
